Chocolate coconut haystack cookies

Postby Tina W » Fri Oct 23, 2009 3:39 am

1 stick butter
1/4 c. cocoa
1/2 c. milk
2 c. sugar
1 tbsp. vanilla
1/2 c. peanut butter
2 1/2 c. oats
1 c. coconut
Boil butter, cocoa, milk, sugar, vanilla and peanut butter for 1 minute. Add oats and coconut and mix well. Spoon out onto wax paper. Let harden. These cookies make it hard to stop at just one....just to warn ya ;)

I used the quick oatmeal and it makes more of a candy texture. If you use the old fashioned oats its a coarser texture but still very good.
Hugs,
